Blanc de Blancs. Elegant white flowers on the nose mingle with citrus and a hint of sea breeze. The citrus characters are enhanced by a sensation of minerality which lift the notes of white peach and pear on to the long and lingering finish. The perfect pairing for oysters.

“This excellent, Champagne method Brut is made from Hyland vineyard Chardonnay planted in 1981. Disgorged last November, it’s young, tart, subtle, elegant and lively. Flavors of crisp green apple abound, with lime and oyster shell highlights. Drink it chilled to bring up the minerality, or let it warm to emphasize the fruit.”
